Małopolskie Centrum Monitoringu i Atestacji Żywnosci

General Information

Malopolska Centre of Food Monitoring was created in 2006 at the Food Technology Faculty of University of Agriculture in Krakow.
The foundation of the Centre was partially financed by European Regional Development Fund. The Centre has, i.a., atomic absorption spectrometers, chromatographic systems: HPLC, GC-MS, chromatographic amino acid analyser, nitrogen and fat analysers, system of capillary electrophoresis.

The structure of the Centre is based on specialised analytical laboratories providing services of food analysis such as determination of nutritional components or contaminants.

Our main research are focused on assessment the nutritional value of food, the presence of contaminants in the agricultural and food articles, and qualitative and quantitative food changes occurring under the influence of different treatment technology.

Analytical offer

Determination of:

  • Dry matter
  • Nitrogen (protein)
  • Total fat
  • Fat extraction
  • Raw ash
  • Na, K, Mg, Ca, Mn, Zn, Fe,Cd, As, Cu
  • Total phosphorus
  • Salt in meat and meat products
  • Energy value (only for products of animal origin)
  • Amino acid composition
  • Determination of content and physicochemical properties of milk (protein, fat, dry matter, lactose, citric acid, urea, free fatty acids, density, acidity)

Area of research

Research carried out in the Malopolska Centre of Food Monitoring concern:

  • implementation of modern analytical methods for assessment of the physicochemical properties of food
  • development of testing and validation procedures for food analysis methods
  • determination of bioactive substances content (vitamins, protein, amino acids) and pollutant residues (metals, pesticides, mycotoxins) in food
  • study on properties of innutritious food ingredients (phenolic compounds, glucosinolates, dietary fibre, fructans)
  • assessment of nutritional habits and nutrition of various social groups.

Participation in research projects:

  • European Research Project FP6 Health+ IST 2004-027126: „Improving Knowledge and Decision support for Healthy Lifestyles” [2005-2008]
  • KBN Research Project 5015/WTŻ/06-08: „Podnoszenie świadomości żywieniowej i wspieranie działań na rzecz zdrowego stylu życia” [2006-2008]
  • PBZ-KBN Research Project 094/P06/2003: „Weryfikacja zasad technologii wytwarzania i wykorzystania żywności bogatej w naturalne antyoksydanty pod względem jej działania prozdrowotnego” [2003-2006]
  • International Project 5b "Projekt der Arbaitsgemeinschaft der Waldviertler Topinamburbauer"

The Malopolska Centre of Food Monitoring is eager to cooperate with local and international scientific and research institutes and enterprises in the implementation of scientific projects and development. We offer organisation of conferences, seminaries and courses in the area of food safety and monitoring, and use of analytical methods in assessing the food quality.
